Ingredients
1-1/2 cups gf flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon kosher salt 2 Tablespoons cold unsalted butter, cut into small pieces 1-1/2 cups sharp cheddar cheese, grated 1 cup sour cream 1/4 teaspoon cayenne pepper
Directions
Preheat the oven to 425°F.
Place the gf flour, baking powder, baking soda and salt in a medium bowl and whisk together until blended. Cut the butter in with a pastry blender, a fork or two knives until the mixture resembles coarse meal. Stir in the cheese and the sour cream. Stir until the mixture forms a soft dough (you may find this easier to do with your hands). Continue to work the dough until it forms a ball. Lightly flour a work surface and pat the dough ball into a square shape about 1/2 inch thick. Cut the dough into 2-1/2 inch squares. Bake the squares on an ungreased baking sheet in the middle of the oven for 15-17 minutes or until lightly golden on top.
