2 small apples, such as McIntosh or Gala, peeled, cored and thinly sliced 1 Tablespoon unsalted butter 1 Tablespoon sugar 1 teaspoon cinnamon 6 crépes (left over crépes work great) 1/2 cup heavy cream 1 Tablespoon sugar Ground cinnamon for garnish
Directions
Melt butter in a medium skillet over medium low heat. Add apples; cook, stirring often until apples are tender. Add 1 tablespoon sugar and a teaspoon of ground cinnamon. Toss thoroughly with apples until well coated. Reduce heat to low.
Pour cream into a mixing bowl. Add 1 tablespoon sugar and beat on high with an electric mixer until stiff peaks form.
If using left over crépes, place crepes in microwave and heat for 20 seconds or less, just until warmed. Place crépe on a plate, spoon apples in the center. Roll the crépe seam-side down. Top with whipped cream and sprinkle with cinnamon.
