Herbed Bread Stuffing

Ingredients

2 boxes (12 waffles) Van’s gf frozen waffles, toasted and cut into 1/2" cubes
3 medium onions, chopped
3 celery ribs, thinly sliced crosswise
1-1/2 teaspoons herbs de provence
1/2 teaspoon dried sage
1/2 cup unsalted butter (1 stick)
1-1/2 cups gf chicken stock
Kosher salt and fresh ground pepper
Directions
Preheat oven to 350 degrees F.

Toast the frozen waffles 1-1/2 times, until crispy but not burned. Let cool, then cut into 1/2" cubes. Set aside.

Cook onions, celery and herbs in butter in a large heavy skillet over medium-low heat, stirring occasionally, until vegetables are softened, about 10 minutes. In a large bowl, toss together bread cubes, vegetables and stock. Season to taste with salt and pepper. Transfer the stuffing to a large baking dish. Bake, uncovered for 20 minutes or until heated through.

This is probably my 5th Thanksgiving using this particular recipe. This stuffing is the BEST. If you are into having leftovers, you will need to set some aside before you serve it in order to even have ’leftovers’

I added 1lb of plain ground pork to the recipe before baking. Delicious

This was one of the best stuffings I have made, gf or not. I could only find Van’s mini waffles, and I used 2 boxes less 8 mini waffles. I also added a little extra herbs de provence, because I love it so. I can not wait for leftovers and will be making this again soon.

I never liked stuffing, even before I was diagnosed as celiac. But this stuffing, I couldn’t get enough of. I was hesitant about the waffles, but when it is made, you can’t tell that there are waffles in it. I have made this three Thanksgivings in a row and am planning on making it this Thanksgiving too.

This is by far the best Stuffing recipe ever My husband and I eat this about 20 times per year. Our extended familes who are not Celiac has made this part of every special occassion as well. Stuffelicious

I left out the onions and celery, but added onion powder and garlic powder and this was absolutely awesome stuffing! I couldn’t find herbes de provence last year so I didn’t make it when I first saw the recipe, but now that I have the spice blend, this stuffing will be a regular feature when we have poultry

I have been a celiac for 10 yrs and my daughter was just diagnosed at 18yrs old.. I made this stuffing with Trader Joe’s gluten Free Waffles with double the amount of sage and 1 egg to hold it all together, it was teh best Thanksgiving ever... We were the happiest celiacs around..
