Baked Apple Oatmeal

Ingredients

1-1/2 cups gf oats
3/4 teaspoon baking powder
1/2 teaspoon cinnamon
Dash of freshly ground nutmeg
1/4 teaspoon salt
1 cup milk
1 egg, lightly beaten
1/4 cup brown sugar, packed
2 Tablespoons melted unsalted butter
1 apple, peeled, cored and cut into 1/2 inch dice

Optional:
Milk & brown sugar for serving
Directions
Lightly butter a 2 quart baking dish. Set aside. Preheat the oven to 400 degrees F.

In a large bowl, combine the oats, baking powder, cinnamon, nutmeg and salt.

In a separate bowl, whisk together the milk, egg, brown sugar and melted butter.

Stir the liquid ingredients into the oat mixture. Pour into the prepared baking dish. Bake for 20 minutes.

Remove from the oven and fold in the diced apples. Return the baking dish to the oven and bake for an additional 20 minutes or until the apples are tender and the top is lightly browned.

Serve warm with a little milk and brown sugar.

This is the best oatmeal I have ever had! I made this with the intention of using up some old GF oats I had and I am hooked. I put a little more than a dash of nutmeg in it and topped it with some brown sugar and milk, but I don’t think the extra sugar is needed.

I added apples at the beginning and baked it for 30 minutes.

This is delicious! To make dairy free I use vanilla almond milk.
