Ingredients
1 cup gf flour 2 Tablespoons sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup buttermilk 1 Tablespoon vegetable oil 2 large eggs 2+ Tablespoons water Butter Pure Maple syrup
Directions
Combine gf flour, sugar, baking powder, baking soda, and salt in a large bowl. In a separate bowl, combine buttermilk, oil, and eggs. Add to flour mixture; stir until smooth. Add water to thin batter, if needed.
Pour about 1/4 cup of batter onto a preheated, lightly buttered griddle or pan. Turn pancakes when tops begin to look dry, or until both sides are light, golden brown. Serve with pure maple syrup and butter.
Tips
Once batter is prepared, you may need to thin with water periodically. Just add a tablespoon at a time, until it is thinned slightly.
