Ingredients
1-1/2 cups gf flour 1/2 cup corn meal 1/2 teaspoon baking soda 1/2 teaspoon salt 1/3 cup sugar 1/2 cup molasses 1 cup buttermilk 2 eggs 1 cup raisins 1/2 cup + 1/8 cup vegetable oil
Directions
Preheat oven to 350 degrees F.
Mix together dry ingredients in a large bowl. In a separate bowl combine all wet ingredients (molasses through vegetable oil). Combine two mixtures together. Pour dough into a greased loaf pan.
Bake for 60 minutes at 350 degrees F, or until a toothpick inserted in the center comes out clean. Let cool on a cooling rack before cutting.
