Buttermilk Biscuits w/Cheese

Ingredients

1-1/4 cup gf flour
1/4 cup cornmeal
2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon salt
1-1/2 teaspoons unsalted butter
4 medium scallions, finely chopped
1 cup sharp cheddar cheese
1/2 cup vegetable oil
1 egg, lightly beaten
1 cup buttermilk
Directions
Preheat oven to 375°F.
Butter a baking sheet.

In a large bowl, combine gf flour, cornmeal, baking powder, sugar and salt. Using your fingertips, work flour mixture until blended. Toss in scallions and cheese.

In a separate bowl, combine vegetable oil, egg and buttermilk. Pour into dry mixture and mix just until mixture comes together.

Spoon dough onto prepared baking sheet spacing them about 2" apart. Bake for about 25 minutes, or until biscuits are golden. Transfer to a rack and let cool slightly.

These biscuits are very flavorful. However, the batter seemed too thin for drop biscuits so I put it in a muffin tin and made muffins. (Made 12 nice-sized muffings.) My children LOVED them very much. I used 2/3 cup rice flour, 1/3 cup potato starch, and 1/4 cup tapioca for the 1-1/4 cup of GF flour. Also, I wasn’t sure what the butter was for since it never refers to it in the directions so I just didn’t use it.
