Ingredients
1-1/4 cup gf flour 1/4 cup cornmeal 2 teaspoons baking powder 2 teaspoons sugar 1/2 teaspoon salt 1-1/2 teaspoons unsalted butter 4 medium scallions, finely chopped 1 cup sharp cheddar cheese 1/2 cup vegetable oil 1 egg, lightly beaten 1 cup buttermilk
Directions
Preheat oven to 375°F. Butter a baking sheet.
In a large bowl, combine gf flour, cornmeal, baking powder, sugar and salt. Using your fingertips, work flour mixture until blended. Toss in scallions and cheese.
In a separate bowl, combine vegetable oil, egg and buttermilk. Pour into dry mixture and mix just until mixture comes together.
Spoon dough onto prepared baking sheet spacing them about 2" apart. Bake for about 25 minutes, or until biscuits are golden. Transfer to a rack and let cool slightly.
