1 cup gf ricotta cheese 1/2 cup gf flour 2-1/2 teaspoons baking powder 1 egg Pinch of lemon zest 1/4 teaspoon salt Pinch of fresh ground pepper Peanut oil for frying
Combine all ingredients except for the oil; cover and let stand for 1 hour.
In a heavy skillet heat about 1" of oil to frying temperature (375 degrees F). Form dough into small balls and carefully lower balls into hot oil (dough will be soft). Fry until golden brown on both sides. Drain on a paper towel. Sprinkle with salt and serve immediately.
We used Frigo ricotta cheese.
