1 cup cornmeal 1-1/2 Tablespoons gf flour mix 1-1/2 Tablespoons sugar 3/4 teaspoon kosher salt 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/2 cup buttermilk 1 small egg, beaten 1/2 small jalapeno pepper, seeded and minced 4 ounces crumbled goat cheese Canola or vegetable oil for frying
Place cornmeal, flour, sugar, salt, baking powder and baking soda in a bowl and whisk to blend. In a separate bowl, mix together buttermilk, egg and jalapeno. Add buttermilk mixture to flour mixtue and stir to blend. Add goat cheese and stir to blend. Add enough oil to a large heavy skillet to reach 1-1/2" up the pan. When oil is very hot, add batter by Tablespoons to oil. Cook until golden the turn over and cook othe side until golden, about 4 minutes total. Transfer to paper towel lined plate and contine for remaining batter. Serve immediately.
