4 Udi’s bagels 8 slices pancetta 4 thin slices cheddar cheese Kosher salt and fresh ground pepper 4 eggs ¼ cup apricot jam
Directions
Fry pancetta in a heavy skillet on both sides until crisp on both sides. Remove to a plate with paper towel. Fry eggs in same skillet on both sides, until yolks are soft but not liquid. Sprinkle eggs with salt and pepper.
Cut bagels in two and toast in toaster. Place cheese slice on cut side of top half of bagel and top with fried egg then 2 slices pancetta. Spread jam on bottom of cut side of bagel and place on top of pancetta. Flip sandwich over and serve.
