Ingredients
1 cup gf cookies crumbs or gf biscotti crumbs 1/4 cup butter, melted 1-1/2 pints fresh strawberries, sliced 1/2 cup red currant jelly, melted Fresh mint sprigs for garnish
For cream: 1 Tablespoon unflavored gelatin 2 Tablespoons cold water 1 cup whipping cream 1/2 cup sugar 1-1/2 cups gf plain yogurt 1 teaspoon vanilla 2 Tablespoons gf fruit or nut flavored liqueur (optional)
Directions
Combine crumbs and melted butter and press into the bottom of a springform pan.
In a cold saucepan, sprinkle gelatin over tater and let stand for 5 minutes. Add cream and sugar and place pan over medium heat. Stir until sugar and gelatin are dissolved.
Remove from heat and add yogurt, vanilla and liqueur.
Pour mixture into springform pan and refrigerate over night.
Spread berries on top of tart.
Heat red currant jelly until melted and drizzle it over berries. Decorate with a few mint sprigs.
Tips
For an alternative, try this recipe with fresh raspberries.
For our crust, we used frozen gf biscotti we had left over in the freezer.
