5 Tablespoons unsalted butter, softened 1/3 cup gf brown sugar 4 baking apples 1/4 cup dark rum 2/3 cup water
Glaze: 1/4 cup gf brown sugar, packed 1 Tablespoon gf flour 1 Tablespoon water 1/4 teaspoon nutmeg 1/8 teaspoon cinnamon Gf vanilla ice cream
Directions
Preheat oven to 375 degrees F. In a small bowl, mix together butter and 5 Tablespoons brown sugar; set aside. Cut the cores from the apples about 1/2" from the bottom of the apples. Do not cut through to the bottoms. Peel the skin from the apples. Fill each apple with the butter/sugar mixture. Place the apples in a glass baking dish and add rum and 2/3 cup water to the dish. Bake for 20 minutes, then baste with juices. Bake for 10 more minutes and baste again. Bake for 15 more minutes. Glaze: In a small bowl, combine remaining 1/4 cup brown sugar, flour, water, nutmeg and cinnamon. Stir until well blended. Remove baking dish from oven and apply glaze over apples. Return to oven and bake for an additional 10 minutes. Remove from oven and let cool for 15 minutes. Serve with ice cream and sauce from dish.
