1/2 cup sugar 3 Tablespoons water 1/2 cup orange juice 1 teaspoon orange zest, minced 2 ripe bananas, thinly sliced 12 scoops of gf vanilla ice cream 1/2 cup macadamia nuts, chopped
In a heavy, medium saucepan, combine the sugar with water. Cook over medium heat, stirring, until the sugar completely dissolves. Bring the mixture to a boil and cook, without stirring, until the sugar becomes a rich, golden caramel, about 5 minutes.
Remove the pan from the heat and carefully pour in the orange juice (pour the orange juice down the side of the pan so that the caramel doesn't boil over). Stir in the orange zest. Place the saucepan over low heat and cook, stirring occasionally, until smooth, about 2 minutes. Let cool. Cover and refrigerate.
Just before serving, gently stir the banana slices into the orange-caramel sauce. Place 3 scoops of gf vanilla ice cream into a dessert bowl. Top with 1/4 of banana mixture and sprinkle macadamia nuts over the top. Repeat with remaining dessert bowls. Serve immediately.
