1 stick butter (1/4 pound) 5 eggs 1 cup sugar 3/4 cup fresh lime juice Zest of 5 limes 2 cups cream Zest of 1 lime for garnish
Over simmering water, melt the butter in the top of a double boiler. In a medium size bowl, beat eggs and sugar until light and foamy. Add egg mixture to butter. Cook, stirring constantly until mixture thickens into a custard. Remove from heat and add lime juice and zest of 5 limes. Let cool to room temperature. In a separate bowl, whip cream until very stiff. Stir into cooled custard until incorporated. Pour into serving bowls and chill for at least 4 hours. Garnish with lime zest.
