Serves 4 Difficulty
12 ounces mixed berries Zest from 1/2 lemon 3 egg yolks 1/4 cup sugar 6 Tablespoons Grand Marnier
Stem and rinse berries and decoratively arrange them in individual souffle dishes; refrigerate.
Bring a saucepan half full of water to a boil and then reduce to a simmer.
Add egg yolks, sugar and Grand Marnier to a heatproof bowl and whisk just to blend.
Place bowl over pan of simmering water and begin whisking egg yolk mixture. Continue whisking until mixture becomes thick and very pale. This will take up to 10 minutes. You must whisk continuously to prevent eggs from curdling. Remove bowl from pan and add zest. Continue to whisk until mixture cools slightly, about 2 minutes.
Heat oven to broil and set souffle dishes on a baking sheet. Spoon creamy egg mixture over the berries and place under broiler. Broil for 30 seconds to 1 minute. (The egg mixture will burn very quickly.) Remove them from the oven when the tops are golden. Serve immediately.
This dessert is naturally gluten-free. It must be made just prior to serving and it does take a bit of wrist power to whisk it to the correct thickness.
