2-1/4 cups gf flour 1 teaspoon baking soda 1/4 teaspoon salt 2 sticks unsalted butter, softened 1/4 cup sugar 1-1/4 cup packed gf brown sugar 1-1/4 teaspoon gf vanilla flavoring 2 eggs 2 cups Hershey's semi-sweet chocolate chips 1 cup chopped pecans
Directions
Preheat the oven to 375 degrees F.
In a medium bowl, combine gf flour, baking soda, and salt. In a separate bowl, beat butter, granulated sugar, and vanilla with an electric mixer until creamy. Add eggs; beat well. Gradually add flour mixture, beating well between each addition. Add chocolate chips and nuts and combine thoroughly.
Drop rounded teaspoons of batter onto ungreased cookie sheet. Bake 8-10 minutes or until lightly browned. Cool slightly on a wire rack.
Store in a cookie jar and enjoy! As a dessert serve cookies over gf vanilla ice cream.
Tips
We used the Gluten-Free Pantry's French Bread flour mix for our flour. It worked perfectly.
