2 lbs. ripe but firm pears, peeled, cored and cut into 1" pieces 1/4 cup Sauternes or sweet white wine 2 Tablespoons unsalted butter 3 eggs 1/2 cup gf flour 1/2 cup sugar 1/2 teaspoon cinnamon 1/4 teaspoon allspice 1 cup milk 1/2 cup cream Grated zest of 1 orange 1 teaspoon vanilla Pinch of salt Powdered sugar
Preheat oven to 375 degrees F. Butter four 4" wide, shallow baking dishes. Add pears, Sauternes or wine to a medium saucepan over medium heat. Cook, stirring occasionally until pears are tender but not mushy. Add cooked pears evenly to the baking dishes along with any juices. In a large bowl, whisk together eggs, flour, sugar, cinnamon, allspice, milk, cream, orange zest, vanilla and salt until well blended. Let the batter rest for 5 minutes. Pour batter evenly over pears and bake for 35-40 minutes. Remove from oven and sprinkle with powdered sugar. Serve immediately.
