Makes About 50 Pralines Difficulty
1 cup gf brown sugar, packed 1 cup granulated sugar 3/4 cup half and half 2 Tablespoons butter 1 Tablespoon vanilla 1 cup hazelnuts, roasted, skinned & chopped Pinch of salt
Line a baking sheet with parchment paper and butter top side of paper.
In a heavy sauce pan over medium-high heat, combine brown sugar, granulated sugar, half and half and salt. Stir until well blended. When mixture comes to a full boil, stop stirring and let boil until a candy thermometer reads 235 degrees F.
Remove from heat, stir in butter, vanilla and hazelnuts. Continue stirring until mixture begins to lose its sheen.
Drop spoonfuls of candy onto parchment paper and let cool until hard.
