Ingredients
2 envelopes (2 Tablespoons) unflavored gelatin 1 cup granulated sugar 1 cup light corn syrup 1 egg white 1/4 cup cocoa powder 1/4 cup powdered sugar, sifted 1/4 cup shredded coconut 5 drops orange food coloring
Directions
Soften gelatin in 1/2 cup cold water.
in a 2 quart saucepan combine sugar, corn syrup, and 1/3 cup water. Cook to soft ball stage over medium-low heat (240 degrees) stirring only until sugar dissolves. Remove from heat; stir in gelatin to dissolve. Let cool 10 minutes.
Beat egg white to stiff peaks. Slowly add syrup, beating on high speed of mixer until candy stands in soft peaks. Pour onto plain brown paper (parchment paper will also work) and spread into a 10x10 inch square. Let stand overnight.
Dust with sifted powdered sugar; turn over on another piece of paper. Moisten brown paper to remove from candy. (Lightly butter your hands and pull the candy away from the paper.) Cut into desired shapes with a buttered knife or buttered cookie cutters.
To color the coconut, place 1/2 teaspoon water in a small bowl. Add 5 drops of orange food coloring. Mix well. Add coconut and toss to coat with color. Roll candy shapes in coconut to coat.
Place cocoa powder and powdered sugar in bowls and roll candy in each. Place finished candys in candy cups and serve.
Will keep stored in an air tight container for several days.
Tips
Don’t give up on these. After these have set overnight you might find it to be difficult to remove the paper. With a little persistence and patience it will work.
