Directions
Melt the butter in a 10-12 inch ovenproof skillet. Place apple pieces in a single layer in the skillet and sprinkle with 1 Tablespoon sugar. Cook over low heat for 5 minutes, turn apples and cook for another 5 minutes. Remove skillet from heat. Place cottage cheese, sour cream, vanilla, 2 Tablespoons sugar, flour and eggs in a food processor and process until blended. Heat a broiler. Heat the skillet with apples over low heat. Pour the batter over the apples in the skillet; cover and cook for about 7 minutes. Uncover and place the skillet in the broiler and broil about 6 inches from the heat source for about 7 more minutes or until it is nicely browned on top. Remove from oven and invert onto a plate. Sprinkle with powdered sugar, cut into wedges and serve.
