Roasted Salmon w/BBQ Rub

Ingredients

1/2 cup pineapple juice
2 Tablespoons freshly squeezed lemon juice
4 salmon filets (about 6 ounces each)
2 Tablespoons brown sugar
4 teaspoons chili powder
2 teaspoons lemon zest
3/4 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon cinnamon
1 Tablespoon dried parsley
1 Tablespoon olive oil
4 lemon wedges
Directions
Combine pineapple juice, lemon juice.

In a baking dish place filets and cover with pineapple juice mixture. Cover and marinate for 1 hour, turning occasionally.

In a medium bowl, combine brown sugar, chili powder, lemon zest, cumin, salt, cinnamon, and dried parsley. Set rub aside.

Preheat oven to 400°F.

Remove salmon from marinade and rub brown sugar mixture all over filets.

Lightly coat an 11"x7" baking dish with oil. Place filets in baking dish.

Roast filets at 400°F for 12 minutes, or until fish flakes easily with a fork. Garnish with lemon wedges.
