Fresh Cod w/Potatoes & Herbs

Ingredients

2 cups heavy cream
2 cups milk
1 pound cod, cut into 2" pieces
4 large garlic cloves, peeled and halved
2 thyme sprigs
1 bay leaf
1 teaspoon black peppercorns
1 Tablespoon kosher salt
1 pound yukon gold potatoes, peeled and cut into 1" pieces
Kosher salt and white pepper to taste
1/4 cup fresh Italian parsley, chopped
1/4 cup fresh chives, chopped
3 Tablespoons gf bread crumbs
Directions
Cut an 8" square piece of cheesecloth. Place galric, thyme, bay leaf and peppercorns in center and gather up edges of cheesecloth. Tie bundle with kitchen twine.

Place cream, milk, herb bundle and cod into a large saucepan; add salt.
Bring mixture to a boil; reduce heat and simmer for 3-5 minutes or until fish flakes easily with a fork.

Drain, reserving cream mixture. Set cod aside in a large bowl. Discard herb bundle.

Return cream mixture to saucepan and add potatoes. Bring to a slow boil and cook potatoes until tender. Drain, reserving cream mixture. Place potatoes in a bowl and mash with a potato masher.

Add potatoes to fish. Gradually add cream mixture to fish and potatoes, stirring constantly, until mixture resembles loose mashed potatoes. Adjust seasonings to taste with salt and white pepper. Stir in parsley and chives.

Preheat broiler.

Transfer cod mixture to a large gratin dish. Sprinkle with bread crumbs.

Broil cod and potato mixture just until top is lightly browned. Garnish with Italian parsley and serve.
