Ingredients
1 small garlic clove 1 Tablespoon mayonnaise 1 shallot, minced 2 Tablespoons fresh basil, chopped Salt and freshly ground black pepper Pinch of cayenne pepper 1/4 cup heavy cream
Two 6 ounce freash tuna steaks (about 3/4 inch thick) 1 medium, ripe tomato, sliced
Directions
Preheat grill.
For sauce: Mince garlic and season with about 1/8 teaspoon salt. Using the back of your knife, mash garlic until it forms a paste. (This will remove some of the bitterness from the garlic.)
In a small bowl, combine garlic paste with mayonnaise, shallots and basil. Season to taste with salt, freshly ground black pepper and cayenne.
Beat cream until stiff; fold into mayonnaise mixture.
For tuna steaks: Season tuna steaks with salt and freshly ground black pepper and lightly spray both sides with olive oil.
Grill steaks for about 2-1/2 minutes, then flip steaks, topping each with a tomato slice. Continue to grill for 2-3 minutes for medium-rare or longer if desired.
To serve: Place tuna steaks on individual plates and spoon sauce over each. Serve immediately.
