Sugar Seared Salmon

Ingredients

2 Tablespoons sugar
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
4 skinless salmon filets
1/4 cup unsalted butter
Green onions, chopped
Directions
In a small bowl, mix together sugar, salt, garlic powder and pepper. Sprinkle both sides of salmon filets with sugar mixture.

Melt butter in a large, heavy skillet over medium-high heat. Add salmon and cook until crusty, about 4 minutes per side.

Transfer salmon to serving plates and sprinkle with chopped onions.
