2 Tablespoons olive oil 3 garlic cloves, minced 1 pound medium shrimp, peeled & deveined Zest of 1 lemon Juice of 1/2 lemon 1/4 cup dry white wine Dash of hot red pepper flakes Salt & freshly ground black pepper to taste
Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute. Increase heat to medium-high and add shrimp and lemon zest; sautéing for 2 minutes. Add lemon juice, wine and hot red pepper flakes. Continue to sauté for 2 minutes or until shrimp are pink and opaque. Adjust seasonings to taste with salt and freshly ground black pepper. Serve over gf pasta or rice.
