1/8 cup peanut oil 2 leeks, cleaned and chopped 1 pound shrimp, peeled and deveined 1/8 cup minced ginger Salt and fresh ground pepper 1 Tablespoon gf soy sauce
In a large heavy skillet over high heat, add 1/2 of the peanut oil. When oil is hot, add leeks and cook until they begin to brown, about 10 minutes. Remove from pan and set aside. Add remaining oil, shrimp and ginger to pan. Cook for 1 minute. Return leeks to pan along with soy sauce and season to taste with salt and pepper. Serve immediately.
