Salmon w/Orange Wine Sauce

Ingredients

1-1/2 pounds salmon filet
Extra virgin olive oil
Salt and freshly ground black pepper
1/2 cup red wine
1/2 cup balsamic vinegar
2 Tablespoons orange juice
Juice of 1/2 lemon
2 Tablespoons brown sugar
Fresh chives for garnish
Directions
Prepare a grill.

Spray or brush flesh side of salmon with olive oil. Season with salt and freshly ground black pepper.

Grill salmon for 5-6 minutes or until it flakes easily with a fork and is just cooked through.

Meanwhile, in a small saucepan, bring wine, vinegar, orange juice, lemon juice and brown sugar to a boil over high heat. Reduce volume by half. Remove from heat. Adjust seasonings to taste with salt and freshly ground black pepper.

To serve: slide a spatula between flesh of salmon and skin. Divide filet into 4 equal portions. Pool sauce onto dinner plates, placing salmon on top. Garnish with fresh chives.
