1 pound salmon fillet, about 1" thick Salt and pepper 5 slices of bacon 1 cup firmly packed, chopped shitake mushrooms 1 garlic clove, minced 2 Tablespoons fresh parsley, chopped 1/2 cup cream Pinch of nutmeg
Season salmon with salt and pepper. Wrap 3 bacon slices around filet. Place salmon on a roasting pan and broil until done, about 10 minutes.
Meanwhile, cut remaining bacon into small pieces, place in a heavy skillet over medium-high heat and cook until crisp. Discard all but 1 teaspoon of bacon grease. Add mushrooms and cook for about 3 minutes and reduce heat to medium. Add garlic and cook for one more minute. Add cream, reduce heat to simmer and cook until cream thickens. Add parsley and nutmeg, cooking for 1 more minute.
To serve: Spoon sauce over filets. You can serve the salmon with the bacon or you can remove and discard the bacon for a more elegant presentation.
