1 large garlic clove, minced 1 teaspoon kosher salt 1/2 teaspoon berbere* 1/4 teaspoon cayenne 1 teaspoon paprika 2 Tablespoons olive oil 2 teaspoons lemon juice 1-1/2 lbs. large shrimp, peeled & deveined Lemon wedges
Soak 6-8 wooden skewers in water for at least 20 minutes.
In a large zip-lock bag place the garlic, salt, berber, cayenne, paprika, olive oil and lemon juice. Add the shrimp. Seal the bag and turn to coat the shrimp with the mixture. Refrigerate for 15-30 minutes.
Lightly oil a grill rack and preheat the grill. Thread 3 shrimp onto each skewer. Grill shrimp 2-3 minutes per side or until cooked through. Serve immediately with lemon wedges.
