Ingredients
1/2 teaspoon freshly ground black pepper, divided 1-1/2 cups chopped tomato 1/2 cup green onions, sliced 1 teaspoon lime zest 1/4 cup lime juice, freshly squeezed 1 Tablespoon tequila 1/4 cup gf flour 1/2 teaspoon salt 2 halibut filets (6 ounces each, and about 1-1/2" thick) 1 Tablespoons olive oil
Directions
In a small bowl combine 1/4 teaspoon black pepper, tomato, green onions, lime zest, lime juice, and tequila. Cover and chill for about 2 hours.
Preheat oven to 350 degrees F.
In a shallow bowl combine remaining 1/4 teaspoon black pepper, gf flour and salt; dredge fish in flour mixture.
Heat oil in a medium oven-proof skillet over medium-high heat. Add fish; cook 5 minutes on one side, or until nicely browned. Turn fish over and top with tomato mixture.
Place skillet in oven and bake at 350 degrees F. for 15 minutes or until fish flakes easily when tested with a fork.
