Combine all ingredients except for salmon and oil in a small dish and stir to combine. Brush mixture all over filets if skinless or on flesh side if skin is left on. Oil the rack of a grill and the skin side of the filets if cooking with skin on. Heat a grill to medium hot. Place filets on grill and cook until fish flakes easily and is somewhat firm when pressed with a fork. Serve immediately.
If using filets with the skin on, carefully slide a metal spatula between the skin and flesh and lift meat away from the skin to serve.
