Makes 4 servings. Difficulty
2 Tablespoons olive oil 1/2 cup chopped chives 4 6oz. fillets of salmon Salt and freshly ground black pepper Lemon wedges
In a small bowl, stir 1 tablespoon olive oil and chives until it is somewhat "paste-like". Season the salmon fillets with salt and freshly ground black pepper. Spread the chive "paste" on top of the salmon (flesh side).
In a large non-stick skillet heat the remaining tablespoon of olive oil over medium high heat. Add the fillets, chive-side down, and cook for about 3 minutes or until lightly browned. Turn the fish over and cook for another 3 minutes or until fish flakes easily with a fork. Transfer the salmon to plates and serve with a lemon wedge.
You will notice in this picture that we served this with a remoulade with julienned apples, however, although it made a beautiful presenation we feel the flavors of this dish will actually be enhanced with a more simple presentation of lemon wedges or slices.
