2 teaspoons paprika 1 teaspoon chili powder 1/2 teaspoon ground cumin 1/2 teaspoon brown sugar 4 6oz. salmon fillets Salt and freshly ground black pepper Olive oil 1 teaspoon maple syrup
Preheat the grill or broiler.
Combine the paprika, chili powder, cumin and brown sugar in a small bowl. Rub the fish with the paprika mixture. Season the fish with salt and freshly ground black pepper. Spray the fish with olive oil (or alternatively drizzle olive oil over top and rub over top to evenly coat).
Place fish on a grill rack or broiler pan and grill for about 7 minutes or until fish is almost done. Drizzle fish with maple syrup; continue to grill for 1 minute or until fish flakes easily with a fork. Serve.
