Steamed Shrimp w/Lemon Grass

Ingredients

1-1/2 pounds medium shrimp, peeled, leaving tails intact
2 lemon grass stalks, split lenthwise
2 cups yellow bell pepper, cut into strips
2 green onions, diagonally sliced into
1" pieces
1/2" piece ginger, peeled and minced
1 Tablespoon serrano chile, chopped & seeded
6 cilantro sprigs
2 limes, thinly sliced into about 10 slices
1 lime, quartered
Directions
Cut 2 pieces of parchment paper to fit into each rack of bamboo steamer.
Top with lemon grass.

Divide shrimp, bell pepper, green onions, ginger, serrano chile, cilantro and thin lime slices between 2 racks; cover with lid.

Add 1" water to a wok; bring to a boil. Place steamer in wok; steam 7 minutes or until shrimp are done.

Remove shrimp mixture and discard parchment paper. Serve with lime wedges.
