4 halibut filets 2 egg yolks 1 Tablespoon lemon juice 1 teaspoon garlic, chopped 1/2 teaspoon salt 3/4 cup parsley, chopped 1 cup vegetable oil
For sauce: In a food processor, combine egg yolks, lemon juice, garlic and salt. Add parsley. With motor running add a few drops of oil until it is absorbed. Add remaining oil one teaspoon at a time, waiting until it has been absorbed each time.
Preheat broiler and lightly oil a baking sheet. Arrange fish on baking sheet and broil for 10 to 12 minutes. Cover fish with a thin layer of sauce and return baking sheet to oven. As soon as sauce starts to bubble, remove from oven. Serve immediately.
You can substitute any firm white fish in this recipe.
