Baked Basa w/Tomatoes

Ingredients

2 Basa fish filets, or any other firm white fish (halibut, bass, cod or snapper)
Lemon juice
Salt and freshly ground black pepper
2 Tablespoons olive oil
1-1/2 cups onion, chopped
One 14.5 ounce can gf stewed tomatoes
2 Tablespoons Italian parsley, chopped
1/4 teaspoon dried oregano
Dash of allspice
Dash of cinnamon
2 Tablespoons Port wine
2 Tablespoons gf bread crumbs
Directions
Rub fish filets with lemon juice and rinse under cold water. Season with salt and freshly ground black pepper. Let sit for 10 minutes. Rinse and pat dry with a paper towel.

Preheat oven to 350°F.

Heat oil in a skillet over medium heat. Add onions and sauté until tender, about 5 minutes. Add stewed tomatoes, parsley, oregano, allspice, cinnamon and wine. Adjust seasonings to taste with salt and freshly ground black pepper. Cook mixture, uncovered for about 10 minutes.

Arrange fish in a lightly oiled baking dish. Pour tomato mixture on top of fish. Sprinkle with gf bread crumbs and dribble with olive oil. Bake for 30 minutes until a light crust has formed and fish flakes easily with a fork.
