Pan Seared Halibut with Lemon-Pesto Butter

Ingredients

3 Tablespoons unsalted butter, softened
1 Tablespoon prepared pesto
2 teaspoons chopped basil
1 teaspoon shallots, chopped
1 garlic clove, minced
zest of 1/2 lemon
Olive oil
1-1/2 lb halibut fillet, skinless
Salt and freshly ground black pepper

Directions
Place the softened butter, pesto, basil, shallots, garlic and lemon zest in a small bowl and stir to combine. Adjust seasonings to taste with salt and freshly ground black pepper.

Preheat the oven to 275 degrees F.

Heat 1 tablespoon olive oil in a large oven-safe non-stick skillet over medium high heat. Season halibut on both sides with salt and freshly ground black pepper. Add the fillet(s) to the pan and cook for 5 minutes on each side. Spread half the pesto butter on the top of the fillets and transfer pan to the oven. Let bake in the oven for about 5-10 minutes (depending on the thickness of your fillets) or until fish flakes easily with a fork. Serve halibut with an extra dollop of the pesto butter.
