Beef Skewers w/Roasted Yellow Pepper Sauce

Ingredients

Beef marinade:
1 pound boneless sirloin steak, cut into
1/2" cubes
3 Tablespoons red wine vinegar
2 teaspoons hot paprika
1 teaspoon salt
1 teaspoon freshly ground black pepper
Dash of cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric

Beef rub:
1 teaspoon hot paprika
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Dash of cinnamon
1/4 teaspoon ground turmeric
3 Tablespoons Italian parsley, chopped

Sauce:
1 large whole bell pepper
1 green onion, finely chopped
2 Tablespoons white wine vinegar
1 Tablespoon olive oil
1 Tablespoon water
1 Tablespoon fresh lemon juice
1 garlic clove, minced
1 teaspoon ground cumin
1 teaspoon hot paprika
1/2 teaspoon ground turmeric
Dash of cinnamon
Salt and freshly ground black pepper to taste
Directions
Prepare beef:
Combine the first 8 ingredients (beef through turmeric) in a large bowl. Stir to thoroughly cover beef; cover with plastic wrap and chill for at least 3 hours.

Meanwhile, prepare rub. Combine rub ingredients in a small bowl. Stir to blend thoroughly; set aside.

Preheat broiler.

Place yellow pepper under broiler and char on all sides. When pepper is black on all sides, remove from broiler and place in a bowl. Cover tightly with plastic wrap and let steam for 15 minutes. Remove seeds and blackened skin; coarsely chop.

Place bell pepper and remaining sauce ingredients in a food processor and process until smooth. Set aside.

When beef is finished marinating prepare grill.

Remove beef from marinade and press rub on all sides of beef. Thread beef on skewers.

Grill beef for about 6 minutes, turning frequently, or until beef is cooked through.

To serve, place a small amount of roasted yellow pepper sauce on a dinner plate and lay skewers on top.
