4 pork medallions 1 Tablespoon lavender pepper Salt and freshly ground black pepper 1 Tablespoon unsalted butter 1 Tablespoon olive oil
Sprinkle each pork medallion evenly with lavender pepper. Season each medallion generously with salt and freshly ground black pepper.
In a large skillet heat butter and olive oil over medium-high heat. Add pork medallions and cook for 3-4 minutes per side, or until cooked through. Remove from heat and tent with foil; let rest for 5 minutes then serve.
