Grilled Steaks w/Caramelized Onions & Feta

Ingredients

1 Tablespoon olive oil
1 Tablespoon unsalted butter
2 small onions, sliced
1/2 teaspoon salt
1/4 cup dry white wine
2 New York steaks, trimmed of excess fat
Salt and freshly ground black pepper
1/4 cup Major Grey’s Chutney
1 ounce gf feta cheese
Directions
In a medium skillet heat olive oil and butter over medium-low heat. Add onion slices and salt. Cook for 30-45 minutes, stirring occasionally. When onions are very soft, increase heat to medium. Add wine, scraping bottom of pan to release caramelization. Onions will turn a nice, rich caramel color. Remove from heat and set aside.

Meanwhile, season steaks generously with salt and freshly ground black pepper.

Lightly oil and preheat a clean grill.

Grill steaks for 4-5 minutes on one side, then turn. Coat top side of each steak with chutney and grill for another 4-5 minutes or until steaks have reached desired doneness.

Remove steaks from grill and loosely tent with foil, allowing steaks to rest for 5 minutes.

To serve: Arrange steaks on dinner plates, top with caramelized onions and crumblehd feta.
