Portuguese Steaks w/Onions & Tomatoes

Ingredients

3 Tablespoons red wine vinegar
2 teaspoons minced garlic
1 Tablespoon paprika
1 teaspoon salt
1 teaspoon pepper
6 rib-eye steaks
1/4 cup olive oil
1 cup onion, chopped
2 Tablespoons red wine vinegar
2 teaspoons garlic, minced
2 cups tomatoes, canned and diced
1/4 cup tomato sauce
1 bay leaf
Salt and pepper
3 Tablespoons parsley, chopped
Directions
In a small bowl, combine
3 tablespoons red wine vinegar,
2 teaspoons garlic, paprika and
1 teaspoon salt and 1 teaspoon pepper. Rub entire surfaces of steaks with mixture and let marinate for 1 hour.

Prepare a grill for direct high heat grilling. Spray or rub grill with oil.

Heat a large heavy skillet over medium heat and add olive oil. When hot, add onion and cook until translucent. Add vinegar, garlic, tomatoes, tomato sauce and bay leaf. Simmer for 4 minutes. Season to taste with salt and pepper and add parsley.

Grill steaks over high heat for
3-4 minutes per side.

To serve: spoon sauce over steaks.
