1 1b. pork tenderloin Salt and freshly ground black pepper 1 Tablespoon unsalted butter 1 Tablespoon olive oil 1/4 cup gf ketchup 1 Tablespoon gf soy sauce 2 garlic cloves, minced 1 Tablespoon fresh ginger, peeled and minced 1/4 teaspoon hot red pepper sauce (or more to taste)
Directions
Preheat the oven to 325°F. Season the pork tenderloin on all sides with salt and freshly ground black pepper.
In a small bowl, combine the ketchup, soy sauce, garlic, ginger and hot red pepper sauce. Set aside.
In a large, oven-safe skillet, melt the butter and oil over medium-high heat. Add the pork tenderloin and brown on all sides. Brush the pork with half the prepared sauce. Transfer skillet to the oven and bake for 10 minutes. Turn and baste with remaining sauce. Continue to bake for 10 minutes or until internal temperature of pork reaches 155°F. Transfer pork to a platter and loosely tent with foil. Let rest for 5-10 minutes. Slice into 1/2 inch pieces and serve.
