3 Tablespoons unsalted butter 2 cups green onions, finely chopped 1/2 cup celery, finely chopped 1 cup red bell pepper, finely chopped 1 cup green bell pepper, finely chopped 3 garlic cloves, minced 1 Tablespoon gf worcestershire sauce 1 Tablespoon gf hot pepper sauce 1 Tablespoon ground cumin 1-1/2 teaspoons salt 1 teaspoon cayenne pepper 1 teaspoon ground black pepper 1/8 teaspoon ground nutmeg 1/2 cup gf catsup 1/2 cup half & half 2 bay leaves 1-1/4 pound ground pork 1-1/4 pound ground beef 3 large eggs

Directions
Preheat oven to 350º F.
In heavy, large skillet melt butter over medium-high heat. Add onions, celery, bell peppers and garlic; sautéing until tender, about 5 minutes. Add gf worcestershire sauce, gf hot sauce, cumin, salt, cayenne, black pepper, and nutmeg; stirring until fragrant, about 1 minute. Add gf catsup, half & half and bay leaves; simmer 5 minutes. Cool completely. Discard bay leaves.
Using hands; mix beef, pork and eggs in a large bowl. Add vegetable mixture and mix until well blended.
Transfer mixture to 9x5x3-inch loaf pan, pressing to fit.
Bake until meat loaf is golden brown, feels firm to touch and thermometer registers 160ºF when inserted into center; about 1 hour 30 minutes. Transfer pan to rack and cool slightly. |
