Ingredients
4 rib eye steaks, trimmed of excess fat 2 Tablespoons olive oil 1/2 teaspoon ground chipotle powder Salt and freshly ground black pepper 1 cup fresh Pico de Gallo 2 oz. goat cheese crumbled 2 Tablespoons fresh cilantro, chopped
Directions
Prepare a grill.
Rub the steaks all over with olive oil. Sprinkle both sides of each steak with chipotle powder, salt and freshly ground black pepper.
Grill steaks for 5-7 minutes per side or until they have reached the desired doneness. Remove steaks from the grill and tent with foil. Let rest for 5 minutes.
Top steaks with Pico de Gallo. Crumble goat cheese over top and garnish with chopped cilantro.
