Ingredients

16 oz. Anazasi beans
12 oz. salt pork, cubed
2 medium onions, chopped
2 celery ribs, chopped
2 garlic cloves, minced
1/2 red bell pepper, chopped
1/2 green bell pepper, minced
1/2 jalapeno pepper, minced
1 lb. ground buffalo meat
1 lb. ground chuck
3/4 lb. beef chuck steak, cubed
1-1/2 Tablespoons chili powder
2 teaspoons cumin
1/2 Tablespoon paprika
1/2 teaspoon thyme
1/2 teaspoon oregano
2 Tablespoons cocoa powder
1 Tablespoon brown sugar
Dash of cayenne pepper
1 14.5 oz. can roasted tomatoes with green chiles
1 14.5 oz. can fire roasted crushed tomatoes
1 14.5 oz. can tomato sauce
Salt and freshly ground black pepper
Sour cream and grated cheddar cheese for garnish (optional)
Directions
Place the beans in a large saucepan and cover with 3 inches of water. Bring to a boil. Cover, remove from heat and let sit for 1 hour. Drain.

In a large saucepan, cook the salt pork until fat is rendered. Remove all but 1 tablespoon of fat. Add the onions, celery, garlic, red bell pepper, green bell pepper, and jalapeno. Cook, stirring often, until vegetables are tender. Transfer vegetables and salt pork to a plate. Add the buffalo meat to the pan; brown. Transfer to a plate. Add the ground beef and cook until browned; transfer to a plate. Add the beef chuck steak and cook until browned. Return the buffalo meat, ground beef and vegetable mixture to the saucepan. Add the chile powder, cumin, paprika, thyme, oregano, cocoa powder, brown sugar, cayenne, canned tomatoes, tomato sauce and beans. Stir to combine. Cover and simmer for 1-1/2 to 2 hours, stirring occasionally, or until the beans are tender. Adjust seasonings to taste with salt and freshly ground black pepper. Serve.
