2 lbs smoked ham hocks (check with your grocer to comfirm that they are gf) 1/2 lbs black eyed peas (soaked for 4 hours) 2 stalks celery, chopped 1 large onion, chopped 1 green bell pepper, seeded and chopped 1/2 teaspoon crushed red pepper flakes Kosher salt and fresh ground pepper to taste
Directions
Place the ham hocks in a large stock pot and add enough water to just cover. Bring to a boil, reduce heat to a simmer, cover and cook for 2 hours. Add pre-soaked and drained black eyed peas, celery, onion, green pepper and red pepper flakes. Season to taste with salt and pepper. Cover the pot and cook for 45 minutes.
