1-1/2 pounds top sirloin cut into 1-1/2" cubes 1/8 cup orange juice 1/8 cup tomato juice 1 Tablespoon lemon juice 1-1/2 Tablespoons olive oil 1 garlic clove, minced 1-1/2 teaspoons fresh oregano, chopped 1/2 teaspoon paprika 1/2 teaspoon ground cumin 1 teaspoon salt 1/4 teaspoon crushed red pepper flakes 1 large onion, cut into wedges 1 red bell pepper, cut into 1-1/2" pieces 1 green bell pepper, cut into 1-1/2" pieces
In a large plastic bag combine orange juice, tomato juice, lemon juice, olive oil, garlic, oregano, paprika, cumin, salt and hot pepper flakes; mix thoroughly. Add beef cubes and blend.
Prepare a hot fire.
Remove beef from marinade and add vegetables to marinade. Thread beef onto skewers. Thread vegetables onto separate skewers.
Place meat skewers on an oiled grill, turn, brushing with remaining marinade until meat is browned, about 15-20 minutes.
Add vegetable skewers to grill after meat has cooked for 5 minutes. Season with salt and cook until lightly browned, turning frequently.
This recipe will produce the best results if allowed to marinate for 48 hours in the refrigerator.
