3 pounds lean pork, cubed Gf flour 1/2 cup vegetable oil 3 cups apple cider 6 small carrots, sliced 1 medium onion, chopped 3/4 teaspoon fresh rosemary, chopped 2 teaspoons salt 1 teaspoon freshly ground pepper
Directions
Preheat oven to 325 degrees F.
Dredge pork cubes in flour.
In a large heavy skillet heat oil and brown pork in batches. Remove pork to oven-proof dish.
Drain oil from skillet and add cider. Cook and scrape browned bits off bottom of pan. Add carrots, onions and rosemary to pork, then stir in hot cider. Season with salt and pepper. Cover and bake for 2 hours.
