Meatloaf w/Chipotle BBQ Sauce

Ingredients

1 pound ground beef
1/2 pound ground gf pork sausage
1/2 cup gf catsup
2 Tablespoons tomato paste
2 eggs
1/3 cup gf bread crumbs
2 Tablespoons worcestershire sauce
1/2 cup parmesan cheese, grated
1 Tablespoon garlic, minced
1/4 cup onion, minced
1 Tablespoon basil, shredded
Salt & freshly ground black pepper

For chipotle barbecue sauce:
1-1/2 teaspoons olive oil
1/4 cup onion, chopped
1 chipotle pepper, dried
1 garlic clove, minced
1-1/2 teaspoon brown sugar
1-1/2 teaspoon gf dijon mustard
1/4 cup worcestershire sauce
1/4 cup gf catsup
3 Tablespoons tomato paste
2 cups gf chicken stock
1 Tablespoon lemon juice
Directions
Preheat oven to 350°F.

In a large bowl, combine ground beef, ground gf sausage, catsup, tomato paste, eggs, gf bread crumbs, worcestershire sauce, parmesan cheese, garlic, onions and basil. Season with salt and freshly ground black pepper.

Bake for 1 hour. Drain off fat. Let cool for 10 minutes then remove from pan. Let cool for 5 more minutes before cutting.

Meanwhile, in a medium saucepan, heat olive oil over medium heat. Add onion, garlic and whole chipotle pepper. Sauté for about 2 minutes. Add brown sugar, gf dijon mustard, worcestershire sauce, gf catsup, tomato paste, chicken stock and lemon juice. Bring mixture to a boil. Reduce heat and simmer for 45 minutes or until mixture thickens.

Serve meatloaf on a bed of mashed potatoes. Top with chipotle barbecue sauce.
