For rub: 1 head roasted garlic* 1/4 cup gf horseradish sauce** 2 sprigs fresh rosemary, leaves removed and chopped 2 sprigs fresh thyme, leaves removed and chopped 1 Tablespoon kosher salt 2 teaspoons fresh cracked pepper 1/4 cup olive oil
Mix all rub ingredients together into a paste. Rub paste all over roast. Insert skewer through cenger of roast lengthwise and set on rotisserie about 2" from heat source. Cook at 18 minutes per lb or about 1 hour 30 minutes- 2 hours or until the inside temperature reaches 120 degrees. (The meat will continue to cook after removing from rotisserie and will reach the desired temperature of 135 degrees) Remove from rotisserie and cover loosely with foil and let rest for 20-30 minutes.
*To roast garlic: Cut 1/4" off the top of a head of garlic. Coat head with olive oil and wrap in foil. Bake for 45 minutes in 350 degree oven.
**Make sure you check the label of the horseradish sauce to make sure it is gf.
